Ingredients

    2 Cans Black Beans
    Peppers, sweet, red, raw, sliced, 1 cup
    Cilantro, raw, 3 tbsp
    Chicken Broth, 2 cup (8 fl oz)
    Garlic, 4 clove
    Cumin, 4 tbsp
    Olive Oil, 1 tbsp
    Sweet Potato, skinned and chopped and boiled till soft, 2 cup

Directions

Skin and chop up sweet potato, boil in water until tender and soft. Mash Sweet Potatoes and mix with one can of black beans, set aside. In sauce pan, heat evoo and garlic and then add one whole red pepper diced. Cook for about 2 minutes until bubbly. Slowly add in all chicken broth and other can of black beans. Once boiling, take ingrediants from sauce pan and place in the blender with most of cilantro, save some for the top to garnish. Blend until smooth. Mix sweet potato and black bean mixture with blended bean mixture, serve amd top with remaining cilantro. Can serve with a dollop of sour cream on top or add hot sauce. Even better the next day.
