Introduction
I based this recipe off of a delicious raita I had at the Clay Pit restaurant in Austin. You can use any kind of plain non-fat yogurt (I prefer Greek), and adjust the seasonings to your own taste. Ingredients

1 6-oz container of plain Greek-style nonfat yogurt
Juice of 1 lemon
2-inch piece of a small carrot, cut into small julienned strips
1-inch slice of cucumber, cut into small julienned strips
1 1/2 Tbsp coriander seed
1 tsp ground cumin
1/4 tsp ground red pepper (cayenne)
Fresh ground pepper and sea salt to taste
Directions
Combine the yogurt and lemon juice in a container and mix well. Next, add the slices of cucumber and carrot.
With the heel of your knife or a mortar and pestle, crush the coriander seed into rough chunks. Add to the yogurt sauce, along with the cumin and red pepper. Season with salt and pepper to taste.
Serve with naan or fresh pita bread. Also a nice sauce for chicken or lamb.
Makes 2 servings as a side dish, 4 servings as a sauce.
