Ingredients

1 T EVOO
1 large shallot, chopped
1 15 ounce can whole pitted cherries, drained or
1 bag of frozen cherries, thawed
zest of 1/2 lemon
1/2 cup stock
Directions
Place skillet on stove and heat under medium-high heat. Add EVOO. Cook shallots 1-2 minutes. Add cherries to shallots along with lemon zest to warm through. Add stock and let cook for another minute. Add butter, toss to combine. Pour over chops or ham.
