Introduction

Ingredients

    .5 cup Ragi Flour( Red Millet flour used in Indian cooking
    1 pkt Instant Grits
    2 Scps Whey Powder
    3 tbsp. Baking powder
    .66 cup Wheat Germ
    2 tblsp. Flaxseed
    1 cup Kashi Go lean Cereal
    3 tsp. Ener-G Egg Replace
    ,5 cup Dried Cranberries
    6 tblsp. Sunspire Vegan Chocolate Chips
    .25 cup True North Pecan Almond or nuts of your choice
    2 tblsp. Molasses
    2 tblsp. Earth Balance Buttery Spread
    3 pkts. Stevia/Truvia
    1.5 Cups Oat MIlk or Rice or Soy Milk
    2 tsps. Cinnamon
    2 tsps. Nutmeg
    2 tsps, Cloves
    2 tsps. Vanilla

Directions

Make sure oven is pre-heated to 400 ( or 375 if yours runs hot) Using cooking spray or paper muffin cups prepare 2 6 cup muffin tins at a time or use 2 12 cup mini muffin pans. Set aside. Combine all dry ingredients. Melt earth balance then allow to cool. Combine Oat Milk and egg replacer whip quickly together. Add molasses, and earth balance to batter. Finally add Oat Milk mix to batter and stir until all ingredients are moistened. DO NOT over stir. Use a spoon to drip batter into cups until they are a little over half full ( these muffins don't rise much) or if using the small tins almost to the top. Put them in the center of the oven and watch them carefully after 10 mins as they cook quickly and time will vary depending on your geographic location and relation to sea level. Enjoy, Enjoy :) These are fantastic with homemade Kashmiri Chai for breakfast or as a lovely addition to an impromptu brunch.
