Introduction
Taken a fruit pizza recipe and lightened it up by substituting fat free cream cheese, cool whip free, and making individual servings by making cookies and topping it instead of making a big pizza with slices. Ingredients

2-18 oz packages of refrigerated sugar cookie dough
2 - 8 oz packages of fat free cream cheese
2 - 8 oz containers of cool whip free
2 c. of sliced fresh strawberries
1 c. white sugar
2 dashes of salt
1 c. orange juice
2. tbsp cornstarch
1/4 c. lemon juice
1/2 c. water
1 tsp orange zest
Directions
1. Preheat oven to 350 degrees. Slice each tube of cookie dough into 18 equal portions (1 oz each). Bake according to package directions.
2. In a large bowl, soften cream cheese, then fold in the cool whip. Spread a small amount over each cookie.
3. In a saucepan, combine sugar, salt, cornstarch, orange juice, lemon juice, and water. Cook and stir over medium heat. Bring to a boil and cook for 1 or 2 minutes until thickened. Remove from heat and add orange zest. Allow to cool but not set up.
4. Place a small piece of kiwi in the middle of each cookie, surround with strawberries. Spoon glaze over fruit and refrigerate for 2 hours or overnight for best results.
