Number of Servings: 6

Ingredients

    2 medium potatoes
    1/2 head of cauliflower
    2 stalks celery
    2 carrots
    1 baby eggplant
    1 sm/med zucchini
    1 parsley root
    16 oz baked beans
    2 Tbsp tomato sauce
    Your choice of herb or seasoning

Directions

Coarsely chop potatoes and cauliflower. Boil or steam until cooked through. Mash together and season with salt & pepper to taste. Set aside.
Chop all other vegetables to desired size and water saute them in a large frying pan. When cooked through, transfer vegetables to a casserole dish. Mix in beans and tomato sauce.
Set oven to broil. Spread potato/cauliflower mash on top of vegetable/bean mix and top with your choice of seasoning(s). (Mrs. Dash Original Blend is good.) Broil for about 5 minutes or until top has begun to brown.

Makes 6 servings.
