Ingredients

    CILANTRO LIME DRESSING:
    1/4 cup Olive Oil
    Juice of 2 Limes
    1/4 cup chopped Cilantro
    1 tsp Cumin
    1/4 tsp Salt & Pepper

    SALAD:
    1 can (19 oz) Black Beans, rinsed & drained
    1 Red Pepper, diced
    2 cups Corn, kernel
    1/3 cup Red Onion, chopped
    1 Jalapeno Pepper, seeded & minced

    1. In medium bowl, whisk together oil & lime juice. Add cilantro, cumin, salt & pepper and mix well.

    2. Stir in salad ingredients into above and correct seasoning.

    Serve at Room Temperature.

    Serves 5

Makes 3 3/4 cups - 5 servings of 3/4 cup each.
