Ingredients

3 cups baby spinach, preferably pre-washed
1 cup squash, sliced
10 cherry tomatoes
1/2 can tuna, in water
1 tsp olive oil
1 tsp vinegar of your choice
1 wedge or 1 tsp lemon juice
1 tsp black pepper
1 tsp paprika
1/4 tsp Old Bay Seasoning (optional)
1/4 tsp McCormick Lemon and Herb seasoning (optional)
Directions
Hardware you'll need:
A mixing bowl
A fork or a potato masher
A cutting board
A paring/chef's knife
Tongs to mix
1) Open your can of tuna and drain most of the liquid out.
2) Put half of the tuna in your mixing bowl; save the rest for tuna salad.
3) Season the tuna with 1/2 tsp of olive oil, 1/2 tsp vinegar, a bit of lemon juice, and your spices and herbs.
4) Mash with your fork or...well, masher.
5) Chop your squash finely into the shape of your choice.
6) Add the baby spinach, squash and tomatoes to the tuna and lightly toss until mixed well.
7) Add 1/2 tsp of olive oil, vinegar, and lemon juice and toss again until well-mixed.
8) Enjoy! Makes one large serving.
