Ingredients

2 T olive oil
1 large diced onion
2 med. garlic cloves
2 med sliced zucchini
14.5 oz. petite diced canned tomatoes
2 cans of drained, rinsed northern beans
1 T oregano
1 T basil
salt & pepper to taste
8 slices of Reduced Fat Sargento Provolone cheese
Directions
preheat oven to 350 degree. Heat oil and saute onion & garlic til softened. Add zucchini, stirring constantly until tender-crisp, about 3 min. Stir in tomatoes, beans and seasonings. Bring to boil. Transfer mixter to casserole dish, top with cheese and bake 25 min.
