Ingredients

    4 Cups of Cooked Black Beans
    2 Stalkes of Celery Chopped
    1 Large Red Onion Chopped
    1 Large Bell Pepper, Chopped
    1 Can of Diced Tomatoes
    4 Boullion Cubes, Chicken, Vegetable or Beef
    2 TBL Garlic Powder
    1 TBL Onion Powder
    1 TBL Smoked Ancho Chili Powder
    1 TBL Liquid Smoke (not considered in caloric content, couldnt find it)
    3 TBL Chili Powder
    Salt to Taste
    2 Medium Size Corn Tortillas, cut into strips and then into halves
    1 Cup of Cheddar Cheese

Directions

Add all ingredients to medium size pot, except tortillas, and cheese, and bring to a boil. While soup is cooking cut tortillas into thin strips and then in half length wise. Apply a thin coat of Pam Cooking spray (canola flavor), to both sides and put in oven at 350 until crispy, probably 5 minutes depending on your oven. Dish up soup and serve with 1/4 Cup of Cheese and 1/4 of the tortilla strips. Enjoy!
