Ingredients

    1 cup flour, browned
    1.2 cup butter,salted
    16 oz. smoked sausage,cut in bite-sized peices
    16 oz. shrimp,shelled and deveined
    2 bell peppers, minced
    2 lg onions, minced
    8 garlic cloved
    1 cup celery, minced
    1/2 cup green onions chopped fine
    4 chicken thighs,shredded
    12cups broth or water,boiling
    Tony Chachere's seasoning,to taste
    File,to taste

Directions

Brown 1 cup flour over medium heat ,stirring constantly until it turns a chocolate cocoa powder color. Be careful not to burn. Set aside in a bowl to stop the browning. In a large pot, melt 1/2 cup butter then sautee onion,garlic, celery, and bell peppers for 5 minutes. Then add flour. Mix thoroughly. Then add boiling water or broth slowly until smooth, and then a soup. Then add smoked sausage cut in bite-sized peices, then shredded meat. Add a couple Tablespoons of Tony Chachere's, then simmer mixture for several hours until it has a rich aroma and desired thickness.Season to taste with Tonys, and File.Then add shelled and deveined shrimp.Cook until pink and serve over rice.
