Ingredients

    4tbs smart balance spread
    1/2c brown sugar
    pineapple 20 oz can drained (rings look prettier but chunks can be used)
    maraschino cherries
    Duncan Hines Butter recipe yellow cake mix
    2/3 c water
    3 eggs
    1Tbs oil
    1/2 c applesauce

Directions

Heat oven to 350. Place brown sugar and smart balance in the botton of 9x13 pan (clear glass looks prettiest)and set in the oven. Mix cake mix, water, oil, eggs and applesauce. Remove pan from oven(smart balance should be melted). Spread melted brown sugar/smartbalance evenly in the bottom of the pan. Arrange a single layer of pineapple, placing a cherry in the center of each ring. Chopped pecans can be added to kick it up a notch. YUM! Pour cake batter over top. Bake 30-35 minutes until toothpick comes out clean. If using a glass pan, serve right from the pan. Otherwise, cool and turn out onto cake plate. Cut into 24 pieces. Serve naked or with whipped topping.

    Great, will make it time and time again. We did substitue egg beaters for the eggs and spenda brown sugar for the reg brown sugar. - 4/15/09
