Introduction

Ingredients

2 Large russet potatoes, washed and sliced to finger size with skins on.
1 C. Wheat flour
1 tsp Baking powder
1 tsp Sea salt
1/2 C Lowfat milk
1 Large egg
1 lb Cod fish or other firm white fish
1/4 C Cider vinegar
1 Tbsp Honey
Steamed spinach
Sea salt
Black pepper
Directions
Preheat oven to 425 F.
Cover a large baking sheet with foil, then apply cooking spray over.
Dry potatoes and spread over the prepared baking sheet.
Spray potatoes with cooking spray then apply sea salt and pepper. Place baking pan in oven.
In a shallow dish, whisk flour, baking powder and sea salt. Whisk in milk and egg then whip to remove any lumps. Add fish fillets and turn to coat with batter.
Add fish to baking sheet and allow to bake for 10-12 minutes until golden brown and tender.
In a small dish, whisk vinegar and honey to serve as dipping sauce.
