Introduction

This is a dish I created for my children that has very appealing colors, interesting taste, filling, and low in calories. This is a dish I created for my children that has very appealing colors, interesting taste, filling, and low in calories.
Number of Servings: 3

Ingredients

    - 2 minced garlic cloves
    - 500 gms fat free yoghurt
    - 200 gms pasta (Cornetti Lisci style i.e. curved little pieces)
    - 1/2 boiled beet (medium size) diced
    - fresh mint leaves for decoration

Directions

Peel and mince 2 cloves of garlic. Add plain non fat yoghurt to minced garlic. dice 1/2 the boiled beet. (Cooking beets takes a long time, I suggest getting canned precooked beets but make sure no sugar is added) Cook pasta and let cool for 5 min then add to the prepared youghurt. Add salt according to taste and mix well. Makes 3 servings. Garnish each with fresh mint leaf.
