This recipe came straight out of "The Macrobiotic Way". Tastes just like something you'd get in an American Chinese restaurant without the added fat and grease! Ingredients

1 package udon noodles
1/4 cup tamari
1 tbsp dark sesame oil
1 medium red onion, cut into half moons
1 medium / large carrot cut into matchsticks
1 celery stalk cut diagonally
Directions
Serves 4
Boil water for noodles. Once water is boiling, cook according to directions, or 3-5 minutes if using fresh noodles. Drain and rinse noodles under cold water.
While noodles are cooking, heat sesame oil in pan and prepare onions, carrot and celery. When pan is heated, add onion and saute for 3-4 minutes. Add celery and carrots and
saute for 4-5 minutes.
Add noodles and tamari to pan, cover, and simmer over low heat for 10-15 minutes, until vegetables are tender. Serve and enjoy!
