Introduction

This recipe is like crustless pumpkin pie without all the sugar and fat. This recipe is like crustless pumpkin pie without all the sugar and fat.
Number of Servings: 4

Ingredients

    1-15 ounce can pumpkin
    1 cup nonfat milk
    1/3 cup Splenda or light brown sugar
    3 egg whites
    1/2 T cinnamon or pumpkin pie spice

Directions

Combine all ingredients in a bowl and whisk together until blended. Spray an 8x8 inch pan with cooking spray. (you can also use a pie pan or custard cups) Bake at 425 degrees for 15 minutes and then lower the oven temperature to 350 and continue baking 40-50 minutes. Cut into 4 equal servings. Serve cold for breakfast or anytime. I like this with 1/4 cup oatmeal.

    Very Good
    I'm a sucker for pumpkin pie. This was wonderful. I missed the crust a little. I think next time I will add a little spelenda in the mix or whipped cream on top. I have a demanding sweet tooth! - 6/15/09

    This was very good. I LOVE pumpkin pie but hate the calories. I also added some of this to my morning oatmeal & it was excellent! Will definately make this again. - 10/4/08
