Ingredients

    Krusteaz Natural Honey Cornbread & Muffin Mix, 1 serving
    Milk, 2%, 1 cup
    Butter, unsalted, 4 tbsp (melted)
    Egg, fresh, 1 large (beaten)
    Jalapeno Peppers, 0.25 cup, sliced & chopped finely
    Kroger Colby Monterey Jack Cheese, 6 oz (shredded)
    Yellow Sweet Corn, Canned, 1.5 cup
    Scallions, raw, 0.25 cup, chopped
    Cooking Spray to prep the pan

Directions

Coat a 9-inch square baking pan/casserole dish with cooking spray and set aside. Heat oven to 400° and preheat the pan.

In a large bowl, combine all the ingredients well. Stir until moistened and all ingredients are distributed evenly.

Spread in the hot baking pan/casserole dish.

Bake for 22 - 27 minutes, until set and lightly golden brown. Cool in the pan on a rack; cut into squares or wedges.

Makes 16 squares (serving size 2 x 2 x 2)

    This cornbread was a ten!!! I mixed all the wet ingredients first so I could gently fold in the dry mix so not to over stir making it tough. I put the cornbread in a 9 X 13 pan for 22 Minutes at 400. It came out perfect. My family will give me the crown, I am the cornbread queen with this recipe :) - 10/5/10

    Wow. This is AMAZING! I love spicy, sweet and cheese. What a great combination. At first I was a little afraid because I thought the cornbread is supposed to just be sweet, but this is absolutely perfect. It melted in my mouth, and it was so moist and delicious! - 11/15/09

    The first time thatI tried this recipe I followed the directions, but had to bake it for an hour to get it done and it was good. The second time I made it I baked it in a 9"x13" pan for 25 min. and it was perfect. - 2/12/10

    Tastes WONDERFUL..BUT the recipe says one serving cornbread mix, the box has 16 servings. You need the whole box for the recipe not just a a little of the mix. Makes DELICIOUS cornbread but w/ 315 calories and 20g Fat. Even with FF milk & cheese. The mix alone is 110 cals per serving w/o extras - 1/2/10

    I think even the hubby would like this one! Had no mix, used .5 C wheat flour, .5 C cornmeal, 1 t bp, 1 t salt, and 7/8 C 3% yogurt. Sauteed finely chopped white onion - had no scallions - with 1 T of oil and added 1 Tbsp in with the yogurt, corn and egg (no butter). Had an 8th serving, 172 calories - 6/16/11
