Introduction

Number of Servings: 4

Ingredients

    4 Chicken Breast, boneless skinless
    1Cup tomato, chopped
    1/4 Cup green bell pepper, chopped
    3 Cloves garlic, minced
    .5 tsp sea salt
    .5 tsp ground black pepper
    2 Tbsp fresh cilantro, chopped
    Lime juice from 1 lime
    1/2 Jabanero pepper, or other spicy pepper
    1/2 C red onion, chopped
    1T Olive oil

Directions

Makes 4 servings, 1 chicken breast apiece. Serve with fresh grilled veggies over rice or pasta

Chop tomato, onion, garlic, peppers, and cilantro.
Mix all salsa/marinade ingredients except olive oil in a ziplock bag.
Mix thoroughly, then add olive oil.
Add chicken, and marinade up to several hours.
Grill until done.

The salsa is excellent as-is, so you can double the recipe to have salsa on the side or for another meal. This marinade is especially good the next day after flavors have blended. Adjust hot pepper to your preferences, and please please please wash hands VERY WELL after chopping jabanero!
