Ingredients

    4 Fresh Eggplants (each should be about 1-1/4" in diameter; you want the smaller ones if you can get them)
    Fat Free Greek Yogurt, Plain, 16 oz
    Kosher Salt, 0.25 tsp
    Paprika, 1 tbsp
    Garlic, 5 medium-sized cloves

Directions

Roast the eggplants and garlic on an open flame (a gas range is good for this) or barbecue grill. If neither are available, use a broiler or the oven. You want the garlic and eggplant to be soft but not scorched.
Add roasted eggplant and garlic, and remaining ingredients, to a bowl and mix thoroughly.

Serve as a dip for crudités, chips, pita wedges or the like. Makes 8 servings.
