Introduction

Great for New Year's Day brunch. Great for New Year's Day brunch.

Ingredients

    These amounts are just what I happened to have in the fridge today :)

    280 grams extra lean ham, chopped
    75 grams fresh baby spinach, chopped
    3 or 4 green onions, chopped
    6 large eggs
    1/2 cup goat's milk
    1 roma tomato, sliced
    30 grams extra old white cheddar, shredded
    pepper to taste

Directions

Pre-heat oven to 375F

Spray a 9" glass pie plate with non-stick cooking spray and set aside. Saute chopped ham and green onions in a non-stick teflon pan on medium heat for about 5 minutes then transfer to prepared pie plate. Layer chopped fresh spinach over the meat and season with pepper (salt is not necessary as there is enough in the ham). Whisk the eggs and milk together and pour over the ham & spinach. Top with thinly sliced tomatoes.

Bake at 375F for about 30 minutes, or until set through (no longer jiggly in the center) then top with finely shredded cheese.

Cut into 6 even wedges and enjoy!
