Ingredients

    5 oz chunk light tuna drained
    5 oz canned chicken breast drained
    1 med. shallot, minced
    2 T. lowfat mayo
    1 T. lemon juice
    1 tsp. minced parsley (dried)
    dash of salt and pepper
    4 slices of wheat bread
    8 slices of tomato
    .5 C. fat free shredded cheddar

Directions

1. Preheat broiler.

2. Combine tuna, chicken, shallot, mayo, lemon juice, parsley, salt, and pepper in a small bowl. Spread 1/4 of the mixture onto each slice of toast; top with tomato slices and 2 T. cheese. Place sandwiches on a baking sheet and broil until the cheese is bubbling and brown.
