There is NO phillo in this Spinach Pie. It can be eaten for breakfast, a side dish, a snack, or a appetizer. Try and get the feta cheese from a Greek, European, or Arabic store it will cost less. Ingredients

    2 16 oz frozen bags chopped spinach
    1 medium onion thinly chopped
    2 cups feta chees crumbled up
    1 tsp coconut or other healthy oil to coat pan

Directions

Preheat your oven to 350 degrees. Coat your pan with your oil. Thaw and drain your spinach then put it in a large bowl. Thinly chop your onion and add to the bowl, crumble your feta cheese over the bowl and let it fall in. Add your eggs to the bowl and mix everything up very well, then pour the mixture in your oiled pan and bake about 30 mins or until the edges are crispy looking and the eggs are cooked.

NOTES:
1. Do NOT add salt, the feta cheese is where the salt is.
2.You can sautee your onions first if you like them to be invicible, but make sure they are cooled when you add them to the bowl so they won't cook the eggs.

    I used 4 eggs that time, sometimes I add up to 6 when I am using it for breakfast. I can't believe I forgot to say how many!
