Introduction

A soft warm comforting version of a taco. Once baked you can top it with whatever you would normally put on your tacos (cheese, lettuce, guac, salsa, totally up to you). Ingredients

    1 box Jiffy Corn Muffin Mix
    1 large egg
    1/3 cup 2% milk
    1 lb ground turkey
    1 packet taco seasoning

Directions

Brown your turkey and drain (you may add chopped onion, normally I would be my son is picky, just be sure to add that on your nutrition log as I didn't in the recipe). Add in taco seasoning according to package direction (I suggest using a little less water, mine was still a bit runny because turkey has more water in it than beef). While simmering prepare corn muffin mix according to package directions. Fill greased muffin cups (or paper-lined if you prefer, haven't tried this dish that way) HALF full or less. My 6-cup muffin tin makes slightly larger muffins than my other muffin tins, as a side note. If yours are a bit smaller, I'd use a little less muffin mix. Then place a heaping tablespoonful of taco meat in the middle of each cup. Bake according to package directions but check done-ness since the temp of your meat can vary the cooking time of the cornbread dough. Top as you wish!!! Makes 6 servings.
