Introduction
Super fast salad with arugula, sometimes known as rocket, fresh spinach, fresh chinese cabbage, and super healthy cranberry raisins is a perfect choice to accompany holiday meals. This is an adaptation of a recipe originally found on the back of a package of Ocean Spray CRaisins. Ingredients

4 oz. fresh spinach
8oz. fresh rocket
8oz. fresh chinese cabbage
1/2 cup feta or goat cheese
2 small red onions
1/2 cup cranberry raisins
Directions
Wash and clean and dry all leafy vegetables and onion. Tear into small pieces or thinly slice with knife and cutting board or kitchen scissors. Thinly slice red onion into rings. Crumble cheese and set aside.
Mix leafy greens in a large salad bowl and add onion rings, crumbled cheese and cranberry raisins. Mix slightly. Serve with your own dressing or use the one suggested below.
