Ingredients

1.5 lb of potatoes (Idaho is what I used)
1/3 c. Fat Free Milk
3 T. Cream Cheese
1/2 t. Salt
1 T. Sour Cream
You can use 3 T. of Mascapone Cheese in replacement of Cream Cheese and Sour Cream.
Directions
Place 1˝ pounds cubed peeled Yukon gold potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat, and simmer 15 minutes or until tender. Drain; return to pan. Add 1⁄3 cup 2% milk, 3 tablespoons mascarpone cheese, and ˝ teaspoon salt. Mash to desired consistency.
