Number of Servings: 24

Ingredients

    2 cups crushed, Fiber One cereal, fine dust, the cereal that looks like little twigs
    1 cup low fat or non fat yogurt
    1.3 cups fat free milk

    .5 cup unsweetened applesauce
    2 eggs
    1 cup packed brown sugar
    1 cup whole wheat flour
    1 cup white flour
    1 cup baking cocoa
    2 tsp baking soda
    2 tsp vanilla
    .5 tsp salt
    100 grams chocolate chips, about .5 cup

Directions

Make 24 muffins, you can halve recipe for 12.

Turn Fiber One cereal into dust. I used food processor then a mortar and pestle.

Soak 5 minutes with wet ingredients, stir.

Add dry ingredients, mix, but don't overmix.

Put into 24 Pammed muffin tins and cook at preheated 375° oven for 15-20 minutes. Serve warm.

Keeps and freezes well.

    These are great. I substituted 2/3 egg beaters for the eggs which makes it less in calories. A good sweet tooth pacifier! - 7/16/12
