Introduction
Great recipe for a healthy but not always yummy food. I add lots of black pepper and a little grated parmesan cheese if I need a little extra calcium. Can be refridgerated and used as a snack or a side for up to week after cooking. PREP TIME CUT BY AT LEAST 20-25 MINUTES IF USE FROZEN SPROUTS, but fresh tastes better! Ingredients

--2 cups brussels sprouts
--2 T olive oil
--2 T balsamic vinegar
--4 cloves garlic
--black pepper to taste
--grated parmesan to taste (not included in calorie calculations)
Directions
1. If using fresh sprouts, soak them in water for 20 minutes to release any sand or grit. If frozen, then thaw and skip to 2
2. If using fresh sprouts, peel the outer layers off (these will often still have a bit of dirt on them even after soaking). With either fresh or frozen, then cut stalk base off and put a "x" incision on the medium and small sprouts (they will split further during cooking), cut the large sprouts in half.
3. Marinade now ready-to-roast sprouts in the rest of the indgredients for at least 20 minutes.
4. Roast in a 350F oven for 20 minutes.
5. Remove from oven, add pepper and cheese as desired.
