Number of Servings: 10

Ingredients

    1.5 lbs ground beef
    1/4 onion diced fined
    1 small to med tomato diced fine
    1/4 cup sliced carrot diced fine
    1/4 diced garlic
    3 tbs of olive oil
    1/2 cup italian bread crumbs
    1/3 cup grated parmesan cheese
    1/4 cup egg beaters
    salt
    pepper
    italian seasoning

Directions

saute garlic, finely diced onion, finely diced tomato and finely dced carrot in small pan with olive oil until onion and garlic are browned.
Mix meat, bread crumbs, grated cheese, egg, and cooled pan ingredients until well blended.
Pan coat a 9X12 pan. and place meatloaf in a long cigar shape about 3" 4" wide and 3" -4" tall.
Bake at 375 for 15 minutes. cover with foil and bake at 350 20 mins. uncover and broil on bottom rack for 5 mins.
Let sit for 5 mins, slice and serve.
