Ingredients

    1.5 cup yellow stone ground cornmeal
    .5 cup whole wheat flour
    2 t Rumsford baking powder
    .5 t baking soda
    1 t salt
    .25 c canola oil divided
    1 large egg
    1.5 cup lowfat buttermilk

Directions

Makes 12 servings
Preheat oven to 400 degrees.
Put 2 T oil in cast iron skillet and preheat skillet with oven.
Mix dry ingrediants in a bowl,
Mix wet ingrediants in small bowl and add to dry.
Mix briefly.
Take out hot skillet and carefully pour in cornmeal batter.
Bake until golden.
Flip out on a plate and enjoy.
