Pork, Lean Mince 125 gram
Beef mince 125 gram(s)
Cream Cheese, 200 grams
Onions, raw, 1 medium, chopped
Garlic, 1 clove, crushed
mixed dry herb, 2 tsp
Carrots, raw, 3 cup
Mushrooms, fresh, 2 cup, very thinly sliced in food processor
Lasagna Sheets, 200 gram(s)
Butter, unsalted, 1 tbsp
Wheat flour, white, all-purpose, unenriched, 0.25 cup
Milk, 2%, 600 mL
Spinach, frozen, 3 cups, thawed
I cup shredded cheddar cheese

Directions
Spray large frypan with cooking spray and cook onion, mushrooms and garlic until starting to colour. Add meat and mixed herbs and cook until brown.
Cover the bottom of your lasagna dish with a little of the canned tomato juice, then add the rest of the tomatoes to the meat mixture. Add grated carrots. Season to taste and let simmer while you prepare sauce.
Place butter in a largish microwaveable jug and melt in microwave. Add flour and mix until smooth. Cook on HIGH 30 seconds. Add milk a little at a time while whisking. Cook on high, checking and stirring regularly, until sauce has thickened. Add cream cheese and whisk until sauce is smooth.
Compile the lasagna: place first layer of lasagna sheets on the tomato juice in your dish. Top with half the meat mixture and one quarter of the white sauce. Repeat: Lasagna sheets, meat, sauce.
Cover with a final layer of lasagna sheets, cover this with the spinach and then the rest of the white sauce.
Sprinkle cheese on top and bake at 190 degrees celsius until golden brown.
