Introduction

Breakfast muffin, very hearty (and heavy!) Breakfast muffin, very hearty (and heavy!)
Number of Servings: 12

Ingredients

    1 cup of steel cut oatmeal
    1 cup of soy milk
    2 egg whites
    1/2 cup of apple sauce (unsweetened)
    1/2 cup brown sugar
    1 cup of whole wheat flour
    6 tbsp hemp seeds (hulled)
    6 tbsp chia seeds
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt

Directions

Makes 24 muffins

Soak the oats in the soy milk for about an hour.
Mix all dry ingredients seperately in another bowl.
Mix remaining wet ingredients into the oatmeal, then quickly mix all ingredients together, adding the cranberries last.

Pour into greased muffin tins and cook for 20 minutes in 400 degree oven (pre-heated)

Muffins will be heavy!
