Introduction

Ingredients

Dry: 1 cup unprocessed wheat bran "Bob's Red Mill
11/2 cup all purpose unbleached flour
1 t baking soda
1 t baking powder
Wet: 2 large eggs beaten
1 cup buttermilk
1/2 cup real maple syrup
3 T canola oil
treats: 1/4 cup toasted chopped walnuts
1 cup fresh blueberries
Directions
preheat oven... 400 F. (I use a toaster oven)
prepare muffin tin, use paper cups if desired inserted into pan and spray top of pan to keep from sticking.
Mix : flour, b powder and b soda, set aside
Mix wet ingredients together and add wheat flakes. Mix.
Add dry and mix...lightly, just to combine.
Add walnuts and blueberries, fold in gently.
Fill muffin pan 2/3 full..bake 20 minutes or until a toothpick comes out clean...
This is the best part... mix and refrigerate the batter to bake off during the week...keeps me from eating toooo many.
