Introduction

Japanese style mushroom sauce spagetti Japanese style mushroom sauce spagetti
Number of Servings: 2

Ingredients

    200g of spaghetti

    300g Japanese Mushrooms eg
    Eringi
    Maitake
    shimeji
    Enoki etc
    Or any mushrooms that are available

    2 Garlic Cloves
    1 tbsp soy sauce
    180ml white wine
    1 tsp konbu (kelp) dried dashi (or other dashi)
    1 tbsp olive oil for sauteeing
    pepper to taste
    shreadded nori (optional)

Directions

Makes 2 servings

1. Cook the spagetti as instructed, rinse and drain and leave aside.

2. Mince the garlic finely, and cut the mushrooms into bite size pieces.

3. Heat oil in a large pan, and add garlic and mushrooms to sautee on a medium heat.

4. Add white wine, and turn heat down and let it simmer and reduce for 5-10mins.

5. Add soy sauce, dashi and pepper.

6. Mix cooked spaghetti through the mushroom sauce and reheat througly.

7. Add shreadded nori before serving (optional).
