Introduction

I was a little skeptical about the parsnips when they showed up in our CSA box, but this was SO yummy. I was a little skeptical about the parsnips when they showed up in our CSA box, but this was SO yummy.

Ingredients

    4 cups sliced parsnips
    2 cups sliced carrots
    2 medium russet potatoes, peeled and chunked
    3 cups chicken broth
    2 cloves garlic
    1/2 tsp celery seed
    1/2 cup sour cream
    2 tbsp butter
    salt and pepper to taste

Directions

Simmer the veggies, garlic and celery seed in the broth until very tender. Strain off the extra broth. Roughly mash the veggies. Add the sour cream and butter. Mash and mix more. Salt and pepper to taste.
