Ingredients

    75g bulgur wheat
    125g broccoli florets
    Juice 1 lemon
    3 tsp olive oil
    ½ clove garlic, crushed
    100g feta, crumbled
    2 tomatoes, diced
    Small bunch Italian parsley, chopped

Directions

Tip the bulgur into a pan of salted boiling water. Remove from the heat, cover and soak for 10-15 minutes. Drain well. Blanch the broccoli until just tender but still bright green. Toss the bulgur with all the other ingredients and season.

    Unbelievably good! It's basically tabbouleh, and the feta is a nice contrast to the lemon dressing. Definitely a keeper! - 7/27/11
