Introduction
I make this recipe for my spouse who loves chili. It is also a great way to add veggies whithout the kids noticing. It is served great on its own, or with baked tortilla chips. Add some shredded cheddar cheese if you like but don't forget to add those calories. This recipe freezes well. I make this recipe for my spouse who loves chili. Ingredients
-
1 lbs. Extra Lean Ground Beef (95% lean if you can)
1.5 c white or yellow onions, chopped
1 c Chopped Celery
3 Cloves of Garlic minced
1 1/4 c sliced carrots
1 c sliced canned mushrooms (or 2 cups fresh), rinsed and drained
1 384 ml Can Dark Red Kidney Beans, rinsed and drained
1 796 ml can Crushed Tomatoes
1 114 ml can of Diced Green Chilies (or 3/4 cup fresh)
1 tbls Mrs. Dash Salt Free Extra Spicy Seasoning
Tobasco Sauce to taste (I used 1 tsp)
1 tsp Black Pepper
2 tbls Chili Powder
1/4 cup chili sauce
2 tsp beef bouliion powder
Directions
Saute Ground beef over medium heat until browned. Break into bite sized pieces as you cook. Drain grease, rinse beef in running water and place in large pot.
Add the onions, celery, carrots and garlic and saute over medium heat until veggies begin to soften.
Add can of mushrooms, kidney beans and crushed tomato and bring to a simmer. Add the Mrs. Dash, Tobasco, Chili powder, chili sauce, green chilies and beef boulion powder.
Simmer on low heat for 1 to 1.5 hours.
If you choose to cook in a slow cooker, brown all the meat first then put all ingredients in slow cooker and cook on low for 8-10 hours or on high for 4-6 hours.
Makes about 6 1-cup servings.
