Slight variation on the Canadian Living Three Bean Chili. I also added a dash of cayenne to kick it up a notch.
It's not super low calorie, but you can shave some calories by using a brown sugar substitute. This is really good over greens with strawberries, feta & chicken
Pre-heat oven to 350
bake pie crust 10 min
remove from oven; spread mozzarella cheese over bottom of pie crust.
add grilled chicken breast strips (diced)
in a separate bowl w/ handmixer cream together: mustard, salt, pepper, eggs, ricotta cheese & milk.
pour into shell over chicken.
Bake for 1 hour
Sauteed tofu scramble with French seasonings (thyme, marjoram, etc). Good with a variety of vegetables.
