Got this off of WeeLicious' website, and tweaked it. Serve it once a week for dinner & have leftovers for lunch... Puree the veggies in a food processor, and get lotsa veggie goodness in the kids, and yourself :)
i adapted the skillet lasagna recipe to be gluten-free, added some more vegetables and ground turkey, instead.
Taken from this site's 5-star reviewed Chocolate Chip Pumpkin Cookies, but de-glutenedfor us out here who don't want/need it. :) Features 1/2 the sugar & Bob's Red Mill All Purpose Flour & buckwheat flour.
We are learning about Ancient Persia, and supposedly, this was Alexander the Great's favorite food. The Persians pronounced Alexander "Iksender". Chicken in a tomato sauce, served over pitas or rice. Mmm.
My daughter is allergic to nuts, and all the GF recipes called for nuts... We also like less sugar than most recipes. The original called for 2/3 cup, so I halved it and added molasses.
I made Chili Mac one night, Ratatouille another... threw the leftovers in a crockpot so we wouldn't waste it...
My mom used to make this for us when I was a kid & I just loved it. I modified it to where it is gluten & casein/dairy free. (You could modify this and use regular flour & milk, if desired.)
My family gobbles this up. It is enough for 3 meals for 4 people in our house.
Yummy, filling soup. Great with a sandwich, muffin, or to hold you over until you can eat more. :)
I sort of improvised pn this one, based off of a couple recipes I saw online, and with the items in my pantry. Easily adaptable for a crock pot.
I'm not good @ rolling enchiladas, so I find this method less time consuming, and it tastes the same, so why not. :)
We loved the chicken slow cooker stew, and an enchilada soup I found on here... I couldn't find them again, so I typed up my own. It was good!
My sister's soup... we eat it once a week. Yum. You can do this in a slow cooker, or use canned beans, if in a hurry.
I used organic canned foods in this recipe because they have about a 1/3 less sodium than their regular counterparts and better for you too :)
I got this 5-star recipe off the Food Network website, but had to tweak it a bit, as I didn't have bell peppers... I also omitted the olive oil and used brown rice vs breadcrumbs.
I tweaked the Goin Green Smoothie we usually drink. Has carrot & orange juice, strawberries, spinach and a banana. Yum!
This is made from dried wild mushrooms and mushroom broth, and has an amazing amount of mushroom flavor, surprisingly! Great to make when you can't get to the store as it requires almost no fresh produce. Enjoy!
I had some leftover salmon salad, and thought it would make a good base for quiche. It did. Enjoy!
I keep working on variations of the 1-minute microwave muffin. I seem to be obsessed! This one is really good, and pretty much tastes like fluffernutter. With only 1 tablespoon of peanut butter, though, it's far fewer carbs and calories than a real fluffernutter! Enjoy and please comment if you try it.
