A little twist on potatoes... A little twist on potatoes...
Number of Servings: 4


    1 large sweet potato/yam
    2 golden yellow potatoes
    2 c frozen or fresh green beans
    1 tbs olive oil
    1/2 tsp salt
    pepper, basil, oregano (italian seasoning) to taste.


At the bottom of a baking dish, add oil and seasonings. Wash & cut up potatoes, leaving the skins on. Add potatoes to baking dish and mix until seasonings are evenly dispersed. Toss in green beans, cover with foil and bake.
Bake at 350 for 45 minutes & serve while hot.
Makes 4 servings.
