This makes a filling, healthy low-carb breakfast and it is very versatile. Any combination of veggies, cheeses and spices can be used. Can also be made in individual cups and baked if you want. If you do, be aware that this expands as it cooks and you probably don't want to exceed 2/3 of the depth of your cup or it will overflow. Adjust cooking time accordingly.
