Adapted from a Fitness magazine recipe. I had a smaller package of mushrooms and no chicken. Also, I was running low on chicken broth, so I used veggie broth to make up the difference.
season with garlic powder, salt, pepper and sweet basil to taste. cook all day in crock pot
A soup I threw together with leftover turkey from Thanksgiving. White meat only!
Quick & Easy!! Choose any variety of Progresso Soup and canned tomatoes. I also add the extra chicken (cooked in MW, then added in) for more protein.
No additional seasonings needed, but I do usually add garlic, pepper, maybe cilantro. Bring to a boil, then simmer 15-20 minutes.

This has meatballs that do not use egg or bread crumbs. This is always well received at our house- even by kids.
Can be served hot or cold and garnished with chopped chives or parsley, or grated cheese of you have some spare calories!

My 1st time having "Jambalaya" since being keto-adapted... it turned out better than I could of hoped! This single pot (used another for nonKETO-friendly's rice, lol) recipe makes plenty to freeze, share, and still have servings for leftovers!! I pair mine with mayo/avocado and side salad or a buttered vegetable!!
