My mom and dad serve with Wycliffe Bible Translators. They started back when they had Jungle Camp. This is one of the recipes from the Jungle Camp cook book.
This is not a low fat dressing, but a little is a good as the top tier dressings you can get at restaurants. I've tried it with low fat mayo and sour cream, and it gets a little runny
Easy, tasty soup that is very basic and easy to customize. All seasonings are to taste, so make it as spicy and flavorful as you want! I usually use more cilantro than I put, but that's because I can't get enough of it. Makes 6 servings.
This is a bit high in calories, but came with my low-carb meal plan. It's delicious!
Cut up vegetables of choice. Toss with fingers add reduced fat feta cheese. Toss. Pour 1/4 cup Good Seasons light vinaigrette over. Mix gently allow to sit for one hour or more in refrigerator. Good for three to five days. Stir before serving.
MIx all ingredients and let simmer for 3 hrs. Note if you use dry beans, let them soak for 2 hours then pour off old water and add fresh water and cook the bean for an hour before adding other ingredients
I was searching through the fridge for a healthy and hearty meal to cook up in the crockpot. I had these ingredients on hand and they all sounded good. I added some Mrs. Dash seasoning along with pepper. You could basically add any vegetable that you or your family enjoys.
My boyfriend loves french onion soup, so I make this as often as i can. This recipe produces a rich broth with sweet undertones rather then salty. Great as a meal on it's own!
This is not really a salade Nicoise, as it lacks potatoes, olives, and hard-boiled eggs. But it's quick and satisfying, and healthy.
In the picture, I also added another 1/4 of the avocado, chopped, into the salad. I had just finished a hard workout and the extra good fat was welcome! (The extra avocado would add about 7 grams of fat, mostly monounsaturated, and about 73 more calories.)
A refreshing salad for a hot day, this contains 75% of your RDA of Vitamin A. I use white pepper rather than black in this recipe because it has fewer aromatics and enhances the taste of the canteloupe. Also I find I can get away with less salt if I use white pepper.

You can reduce the olives or feta in order to lower the sodium content of the salad.
The peppadew peppers are pickled sweet/hot peppers. You could substitute pepperoncinis, but the salad will lack some sweetness.
Try to use the white pepper if you can; it allows you to get away with less salt in the dressing because it increases your perception of saltiness.
This is a recipe that I found somewhere else and adapted a little bit. Sooo good, and can easily be changed to a vegetarian recipe by changing the broth and gravy.
