A tasty but lighter version of potato leek soup with only a little bit of cream (optional).
This is my take on harvest soup. It is a good meal on its own or with a nice bottle of wine.
I made this to get rid of some left over fresh vegetables and wanted a tuna salad spread. It turned out to be really good and I thought I would share it with the community. Enjoy!

This is a great versatile way to use black beans. Use as a dip with some tortilla chips or crackers, buritto or enchilada filling, serve over brown or wild rice, spread on a soft flatbread and bake on 375 for 5 min to have a yummy mexican pizza, put it in a pita pocket, or just eat it by itself!
The mix of flavors in this soup are a treat. Its great for the slow cooker on busy days. It can be serverd with corn muffins and sour cream or just by itself!
I got this recipe from Bob Harper from the biggest loser ans tweaked it a little bit to add the peppers. Just made it for myself and it is fantastic. Try it you won't be disappointed.
