Vegan pancakes with blueberries. This is a double of the recipe in the book --- it has 2 servings in the original.
This recipe is adapted from a recipe Giada De Laurentiis did on the food network. I have changed it quite a bit, and my family really likes these.
This is dang near perfect, but I will be tweaking it a bit more...I made it first w/out brown sugar, then tried a little brown sugar on my plate w/the first patty, and it really brought out the flavors - esp. the fennel seed.
**Protein=39.8%, Fat=35.1%, Carbs=25.2% ** This is a good low-carb ratio (The Zone Diet is 30, 30, 40)
This is a low-carb breakfast casserole, different from the norm because it has no dairy, uses ground turkey sausage, contains healthful quinoa, and is baked in individual serving jelly or canning jars. The quinoa is nice because of it's nutritional value, and it holds moisture well and keeps the dish from being too dry (I used to depend on cheese to do this ;)
I make this and divide it between 6 12 oz. jelly jars, so it' s easy to take one to work and warm it in the microwave.
This is a large filling Smoothie. My 11 year old daughter has one for breakfast every morning and loves it. I use blueberries and strawberries but you can use any frozen fruit you wish.
3 tbls flax meal
1 oz cup raisins
1/4 cup egg white
1 tsp baking powder
1 tsp vanilla
dash salt
stevia to taste 1 tsp pumpkin pie spice

This is a Blueberry Banana smoothie made with wheat free Whey Protien.
I tend to make quiche with just whatever I have laying around. This one uses hard salami and pesto. Spectacular.
