These muffins are a great snack or breakfast treat. Sweetened with ONLY over-ripe bananas, they are absolutely delicious. The calories are calculated with the chocolate chips but they are optional... or you can do chopped walnuts for an even healthier recipe that is completely sugar free!!!

This is a hearty breakfast meal that is made the night before. In the monring, you pop it in the oven and you have a wonderful breakfast that is nice and filling. The 15 servings are pretty good size portions and can be made healthier by using all egg beaters.
Really low in fat and filling lentil - I add curry to them but you can add anything you like. Perfect as a side dish or for when you are feeling really hungry and you've almost eaten all your calories for the day :)

These quick and easy miniature frittatas make an elegant brunch offering. They tend to puff up quite a bit in the oven. After resting out of the oven, they should deflate a little--but they'll still look great on the plate and taste delicious!

Prepare evening beforehand for breakfast. Filling & nutritious. Breakfast or a snack.
Mayo Clinic's Dietitian's tip:
You can mix this in the evening and refrigerate it overnight. Just pop it in the oven first thing when you get up.
I halved the recipe; with small reduction of brown sugar amount.

Lower Fat version of popular breakfast casserole, with bread & meat left out. Makes a good, frugal Sunday night supper. Uses Asparagus stems that otherwise might be discarded.

I chose low fat yogurt as opposed to fat free to make some of the fat soluble vitamins more digestible. Fat free works perfectly well though.
