Adaptation of a recipe from Woman's Day 10/13: Wholesome Fall muffins. I used half the sugar, oat bran instead of wheat bran, added vanilla, carrots, prunes & nuts.
This is a great healthy breakfast option and it makes a lot so if time is never on your side in the mornings you can make this Sunday night and have plenty for several days. It also freezes well.

This was an unexpected find. Very good and unexpected low cal. I will make these at home and experiment with the fillings. Probably will use fat free cream cheese.
These are great egg muffins for on-the-go folks that can be refrigerated, stored and re-heated.
I got this from the Doughmakers' cookbook; however, I lightened it up by using applesauce instead of margarine, Splenda instead of sugar, and two egg whites in the place of one egg.

This is one of my all time favorite dinners or brunch treats. It's packed with veggies, flavor and protein. It's incredibly healthy, and also lends itself to personal substitutions according to your own preferences. You can use ground beef instead of turkey, or rice instead of orzo. Just remember those substitutions are not in the calculated nutritional info for this recipe.
Generally a dessert, I've adapted this recipe to use minimal sugar & lots of fruit so we can eat it for breakfast.
