This is a variation on a Greek favourite Spanikopita that is made in a lasagna or casserole tray instead of individual size (read: less work to make for group occaisons).

I actually think it gets better with age, and my favourite time to eat it is (cold) for lunch the next day. Delish!

A great vegetarian option for visiting freinds, or a way to get a serving of spinach into those who usually rebel! Popeye would be proud :)

Zucchini & Sausage Frittata

Break up Italian Sausage and brown, add onions and chopped zucchini and cook until soft. Stir in grits and seasonings. Spray a 9 X 9 pan and add sausage mixture. Sprinkle the chopped roma tomatoes and green chiles on top. Whisk the eggs and milk together and pour over mixtures. At this point, you can refrigerate overnight, or proceed to next step. Sprinkle with Parmesan cheese and bake in a 375 preheated oven for 25-30 minutes, or until golden and puffy and knife comes out clean.
