I love Starbucks Banana Bread but needed to find a version that I could enjoy on a more regular basis. I was able to cut down on the amount of sweetener and fat by adding an extra banana. I'm using Almond butter instead of oil/shortening/regular butter for added protein and provide a healthier fat, plus it gives it a nice flavor.
A easy Mexican dinner for under 300 calories per serving. You can even assemble it ahead of time and bake before serving.

What I love about this recipe is its versatility. The roasted grapes are delicious with grilled bread as well or all by itself with a spoon! It could be served with any number of cheeses. I'm betting a blue cheese pairing would be spectacular!
