The only way to get my son to eat vegetables is to find a way to put chocolate on them. These muffins are especially moist and chocolatey, relatively low in sugar, and most importantly: are guaranteed to get him up in time for the school bus.
I'm making these for halloween to keep my inner tick -or -treater happy. When I start longing for a piece cup of carrot cake, I make these muffins. If I'm really indulging mysef I carefully layer the raisins and walnuts between drops of batter. WONDERFUL with a steaming mug of coffee.
This ham and cheese quiche gives you a decent amount of protein and although there is a bit of fat you can switch it up to make it healthier (I just didn't have the healthy ingredients this time), such as low fat cheese, 1% milk instead of half and half(it will work I have tried it), adding extra veggies.

Delicious. Very low fat and very filling. Very flavorful. Due to celery and sausage I had to add very little salt. I made this soup so I could have something good and low in calories and fat for lunch and dinner for the next coupla days. I was also able to make it as spicy as I wanted because its just for me. My kids love cabbage and I usually can't make it spicy at all. My husband couldn't stop eating it and he is nowhere near on a diet
