This is our own adaptation of a recipe originally from 101 Cookbooks. The celery and fennel seed are a substitution for bulb fennel. It was intended to be eaten hot; we prefer it as a light, delicious cool summer dish. We're also large portion people - yours might go further.

My friend makes this when she comes over. She uses 1/4 c. sugar instead of the honey. I also add tapioca pearls to make sure it's firm/not watery.
Any vegetables and pulses can be used, as well as leftover meat, or it could be just vegetables and pulses. I usually make this in the morning and transfer it to my slow cooker for our evening meal.
I modified a Taste of Home recipe to reduce the fat content and add some fiber. Tasty!
